Our Story

Named after the brick oven we built many years ago when setting up the bakery. We bake real bread from Organic flours sourced from France and Germany. We also mill our own flours from wheat and heritage grains in a traditional stone mill from East Tyrol.

Our Oven

The masonry oven I built several years ago is used for cooking our Neapolitan style pizza at around 320 C. The high temperature cooks the Pizza in around 90 seconds.


We bake with organic flour from France and Germany. We also mill our own wholemeal flour on a Stone Mill imported from East Tyrol.

Slow ferment

We ferment our doughs over many hours using leaven and biga made from organic wheat or rye flour.
